New Year New Snacks Part II

logo-wee-notesI trust you will find at least a few fun, yummy, simple, and healthy snacks your child will enjoy. Children tend to be more apt to try new foods they help prepare. These came from kidsactivitiesblog.com (with a few tweaks).
Healthy S’mores
1 large apple
Peanut butter
Granola
Chocolate chips (semi sweet)
Wash and core the apple, then cut into rings approximately ¼” thick. Spread peanut butter on one slice and top with granola. Add chocolate chips and cover with a second apple slice to make a healthy s’more sandwich.
No Bake Energy Bites
½ cup chocolate chips
1 cup toasted coconut
1 teaspoon vanilla extract
½ cup nut butter (almond, sunflower, coconut or peanut to suggest a few)
1 cup dry oatmeal
Pour all ingredients into a medium size bowl. Stir ingredients until combined. Roll into balls. Refrigerate until firm.
Protein Popsicle Smoothies
½ cup Strawberry milk
1 cup Greek vanilla yogurt
Blueberries
Raspberries
Pour milk and yogurt into blender. Add a handful of each kind of berry. Blend until smooth. Add the mixture to your favorite popsicle molds. Freeze for 3-4 hours and enjoy.
Note: To pack in a lunch, freeze in a cup with an airtight cover overnight and it should still be cold, and the right consistency for eating by lunchtime the following day.
I would suggest that you make a list of five reasonably simple, quick, and healthy meals your child likes. Keep the ingredients on hand and use them when you are tired, rushed, or your child hasn’t eaten well and is cranky. When appropriate, allow him to assist you as you prepare the meal. A kindergartner is capable of and should be able to set the table. You can easily make paper place mats on which you have drawn around the plate, glass, and flatware to help him learn where everything goes. Praise his efforts at helping.
